Do you want to eat healthy, but find you’re just too busy to prepare your lunchbox?


Trick question, people! As the saying goes; make time, not excuses!


On that note; here’s my top 5 favourite portable breaky/snacks. Each includes minimal ingredients, but still requires some thinking ahead to make sure you have everything you need. Never underestimate the power of a P•L•A•N!

 

1. Chia Pudding

It’s as simple as seeds, nut milk, coconut and your choice of fruit. Jar it + let it soak = pudding!

2. Chocolate Mousse

Ingredients + blender = mousse! So easy!

3. Smoothies

There are soooo many wonderful options here! When time is of the essence, whip one up the night before, jar it, then grab it as you run out the door in the morning.



4. Bruffins (breakfast muffins) or egg slice

Super easy and always delish! Grate up some zucchini & dice up any extras you have in the fridge. Throw in some herbs and (of course) your eggs. Season with salt an pepper. Bake until cooked – you’re done! This will generally last a solid 4-5 days in the fridge, making it a great one to prepare at the start of the week for an easy meal on the run.



5. Raw vege

It’s all in the name! Chop up your fave vege (my regulars include capsicum, carrot & celery) and keep it stored away for a quick bite on the run, or as something nourishing to keep you going at your desk or in the car. If you’re feeling creative, whip up a nice guacamole or hummus to go with. So easy!
